Something my hubby always brings up about Christmas time is the baking and treats that his Nana would lovingly make every year. Out of all of it, the chocolate covered peanut butter balls are his favourite tasty memory. They must have been pretty good, as that is one thing his father (who isn’t big on sweets) reminisces about as well.
So this year, in honoring family traditions and trying to start some of our own, I decided to make some of these little lumps of sweet, nutty deliciousness for our Christmas Day gluttony.
Now, I am no pro in the kitchen, but these treats were super easy. And incredibly delicious, from someone who doesn’t even like peanut butter.
I used this recipe from She Wears Many Hats – a blog I keep coming across.
Only 4 ingredients are necessary!
Basically, all you have to do is mix together peanut butter, icing sugar and butter, and let the dough mixture stand 15 minutes. Then roll the dough into little balls on a baking sheet, refrigerate for at least 20 minutes, and dip to cover in chocolate.
Delicious, easy and it’s nice to have steps you can do whenever you have time. Which is why I’ve really been loving being reminded of the fact that you can make cookie dough, then freeze it to do the actual cookie making and baking at a later, more convenient time.
