It is not a secret that I’m no Martha Stewart in the kitchen. I have a really hard time coming up with ideas for dinner that actually sound exciting, and am even worse at making a dinner plan come to life.
But I try. Especially being that I’m raising a little girl who is eating more and more of what we adults have on our plates, I think it’s pretty important that I put forth an effort to make food at home that at least somewhat resembles a healthy, delicious meal.
Pinterest is always ready to flaunt what other people are successfully making for dinner and waving the beautifully arranged, perfectly done edibles on kitsch dinnerware and tables in my face. Every now and then I take a stab at recreating other people’s domestic talents.
Last night I decided to try my hand at this recipe for Easy Chicken Fajita Bake. The Pinning Mama was not lying – this by far one of the easiest dinners I have ever made. PLUS, it turned out absolutely delicious, despite my recipe alterations (I’m not the best at following foodie rules).
So, here is how you, too, can make a simple, easy, delicious meal yourself.
Easy Chicken Fajita Bake (A copycat recipe)
You will need:
The original recipe called for oil, but I left it out. With all the cheese and the liquid from the veggies, it really wasn’t necessary.
1. Put chicken in a baking dish.
2. Chop up pepper and onion and put on top of chicken.
3. Sprinkle spices all over. (In the original recipe this step came before adding the veggies but, oops, I forgot. It still tasted just fine.)
4. Grate cheese all over the top.
5. Pop the dish in the oven at 375 degrees F for 35-45 minutes (My bake was fairly small, so 35 did it).
As suggested by The Pinning Mama, I served it over (brown) rice. It was delicious, and quickly gone.
The Pinning Mama has a lot of great-looking easy recipes, that I will have to try more of, since this one went so successfully.

Yum! The funny thing is I adore making meal plans. I find its a sanity saver. I just look at what I planned to make and put the wheels in motion. Sometimes when I’m laying on the couch pooched at 4:30, I wouldn’t have the motivation to get up if I didn’t know what I was making.
I do a very similar recipes to this in my stoneware, but it cooks the onions, peppers and chicken with spices all at once. Pretty tasty! I love one pot meals.
