Being better at nourishing my family is one of the goals I set for myself in my New Year’s resolutions. I’ve been working hard on regular meal planning (I’ve got something coming up that I can’t wait to share!), and trying new recipes is a must.
These tasty pork chops are seared, then simmered with spices, apples and onions. I’ve never gone the pork-and-apple route before, but I’ll definitely take that path again. They were delicious!
The original recipe is featured on eatagreatdeal.com. I tweaked it a bit to what I had and how much we needed for one dinner, and used these ingredients:

1. Thinly slice the onion and apples.
2. Sear the pork chops in oil, seasoning each side with salt and pepper. Don’t move them around while cooking – once the proper crust has formed they will naturally unstick from the pan.
Remove the chops after both sides have seared for 5-7 minutes.
3. Put apples, onions and butter in the now empty pan. Let cook a few minutes while they soften. Add vegetable stock, cinnamon, nutmeg and brown sugar, mix well, then put the pork chops back in. Make sure there are some (rotating) apples and onions covering the pork chops. Simmer for 15 minutes, or until at least half the liquid has disappeared.
We ended up with the perfect amount of food for 2. I usually make some sort of starch, like potatoes or rice, but I didn’t bother with all the apples and onions (there was no shortage).
The cole slaw was simply thinly sliced cabbage, grated carrot, raisins and slivered almonds, with a cole slaw sauce.
