For picky eaters, presenting food in a fun and pleasing way can often make the difference between “Ew, no way!” and “I want that!” So what better way to sneak in some leafy green nutrition than with Shamrock Eggs on St. Patrick’s Day!
To make this highly nutritious and energizing breakfast, you will need:
1. Crack eggs into a bowl (I did this to ensure to shells went in, but you could crack them right into the blender). Add eggs, milk and spinach to blender and blend it all up until the spinach is well blended.
2. Pour egg mixture into 4 egg poacher cups. Cook for about 5 minutes on medium heat, until eggs are fully cooked.
3. Arrange the 4 green egg circles onto a plate (green top-egg up for best colour) with a spear of cucumber.
Easy, delicious, and you never even have to tell your leafy-green-hating children that their shamrocks are packed full of nutritious spinach.
