Sometimes I find myself struggling to provide healthy toddler snacks for my little one. Here is a simple recipe for a make-ahead, fast and easy snack to keep the hungry-time grumpies at bay. Whether you’re trying to feed yourself, your toddler or older child, these little balls are super easy to make, easy to grab for on-the-go, and packed with protein and all the good stuff to nourish our bodies.

It took me a while of thinking about making these little gems before I actually tried it. When I did, I was surprised by how easy it really was. Here’s what you do.

 

1. Get out your food processor. If you’re like me and have a million kitchen gadgets that don’t often get used, you may want to dust it off.

2. Head into your pantry or open up your cupboards and pull out anything that seems like a healthy choice that you would like in the power balls. This is what I used for the first time:

  • Slivered almonds
  • Almond butter
  • Hemp hearts
  • Ground flax seed
  • Pitted dates
  • Raisins
  • Unsweetened shredded coconut (for rolling)

3. Put everything but the coconut in the food processor (as much of each ingredient you use as you would like) and push buttons as randomly as you like until everything has been chopped up nicely into a putty consistency.

4. Form mixture into balls and roll in shredded coconut.
